Hungarian Goulash @ Chez Andy

On a recent visit to Chez Andy I had the wonderful Hungarian Goulash which is on as a special at the moment, the meal did not disappoint with cooked to perfection sweet and tender beef in a rich flavoursome sauce.

Goulash is a soup or stew of meat and vegetables, seasoned with paprika and other spices, originating from the medieval Kingdom of Hungary. 

Its origins trace back to the the 9th century when cooked and flavoured meat were dried with the help of the sun and packed into bags produced from sheep's stomachs, needing only water to make it into a meal. It is one of the national dishes of Hungary and a symbol of the country.

Chez Andy follows the authentic recipe which actually contains very few ingredients - the finest cuts of beef, onions, garlic, tomato paste, seasoning and the all important Hungarian sweet paprika. The secret to making it taste as good as it does is the exact quantities of spices used and the cooking time which he told me was many, many hours which is what makes the beef so tender and melt in the mouth.
