Sublime Wagyu Steak @ Chez Andy

Chez Andy Swiss Restaurant & Steak House is the première fine dining western restaurant in Nakhon Ratchasima (voted number 1 out of over 180 restaurants in Korat on and is situated in the city centre just a few minutes walk from the Night Bazaar. Andy, a Swiss head chef who has run restaurants in Koh Samui and Korat as well as other venues for over 40 years, is the host with the most offering fantastic imported meats cooked to the finest standard and presented to perfection in a wonderful European style environment.

His menu takes a good 10 minutes to peruse and offers a mind splitting variety or delicacies, with starters that will have you salivating and main courses that will leave you stuffed, yet wishing you could eat more. I've eaten here many times and have worked through the menu to ensure that I get to try everything. The problem is that there is so much on the menu and I always want to repeat my last order on my next visit. The spaghetti party is a bargain and leaves you full, the shnitzel is delightful, with a rich sauce and tender pork flavour and the cheese fondue is strong in flavour and creamy. I can't tell you about all the dishes, but I will tell you about the most terrific... The Wagyu beef steak.

As with many of Chez Andy's ingredients, the Wagyu beef is imported. Wagyu is a Japanese breed of cattle that derive from native Asian cattle. It refers to all Japanese beef cattle, where 'Wa' means Japanese and 'gyu' means cow.

Wagyu cattle were originally used in agriculture, and were selected for their physical endurance. This selection favoured animals with more intra-muscular fat cells which causes marbling, therefore providing a readily available energy source. It is the marbling that makes the beef so tender, juicy and delicious when it is cooked. The unique taste and tenderness of highly marbled Wagyu beef makes for an unrivalled eating experience. That is why Wagyu beef is finding its way into the repertoires of gourmet cooks and fine restaurants across the globe.

When the order was taken, I was asked how I wanted my steak. Without wanting to look uncivilised, I decided to go medium rare (I'm used to over cooking Thai steaks) and it came perfectly cooked. It was beautifully browned on the outside and when I cut into it, the beef had a bright red centre and a lovely jus teasing its way out. It tasted special without any of the extras on the side. The beef was tender, well seasoned and my knife went though it as if it was butter. My teeth had nothing to do! To accentuate the steak's natural flavour, Andy had prepared 4 delicious sauces: pepper, mushroom, a slightly chili flavoured steak sauce and the piece de resitance... Cafe de Paris (OMG). I could have eaten a litre of the last sauce on it's own, it was a rich creamy peppery delight that dreams are made of. A strong flavour, but light and whipped, now an infamous sauce to sit aside many a steak in European restaurants.

It came served with a creamy mushroom risotto on the side, broccoli topped with shaved almonds and cherry tomatoes, served with a garnish of fresh rosemary. On the whole, with the extremely friendly waiter/waitress service and very friendly host I couldn't have asked for anything more. Chez Andy provides a dining experience that is unmatched in Korat and I should expect it would be unbeatable in the whole of Isan. You get a high end Bangkok meal in the comfort of your own city.

Wagyu is tastier, more extravagant and healthier for you too. Health experts have discovered the mono-unsaturated to saturated fat ratio is higher in Wagyu than in other beef, and the saturated fat contained in Wagyu is different (whatever that means? I did a little research, though I have to say, the beef does itself justice without this cyber argument needing to be either true or even necessary.)

Chez Andy Swiss Restaurant & Steak House also have a nice Beer Garden and a fine selection of genuine Italian pizzas. It's a great place to sit outside and enjoy the cafe restaurant style atmosphere, or sit inside and enjoy the wine bar they have on offer.
